Ruby Red Christmas Borscht Bliss Recipe

Ingredients:
– 2 large beets, peeled and cut into thin strips
– 4 cups vegetable broth
– 1 large carrot, cut into thin strips
– 1 medium red onion, thinly sliced
– 2 cloves of garlic, minced
– 1 cup shredded red cabbage
– 2 tablespoons white vinegar
– Salt and black pepper to taste
– Sour cream or yogurt for topping
– Fresh dill for garnish

Instructions:
1. Peel the beets and carrot and slice them into thin strips.
2. Thinly slice the red onion.
3. Take a large pot and combine the beets, vegetable broth, carrot, red onion, and garlic in it.
4. Bring the mixture to a boil over medium heat.
5. Once boiling, reduce the heat to low and let it simmer for about 30 minutes until the vegetables are tender.
6. Add the shredded red cabbage to the pot and let it cook for an additional 10 minutes.
7. Add in white vinegar, salt & black pepper. Stir well.
8. Using a ladle, serve borscht into individual bowls. You can serve it hot or chilled depending on your preference.

When ready to serve:
1. Dollop with sour cream or yogurt if desired.
2. Garnish with fresh dill.
